A concept aimed biocatalysis and developed a parametric model of the
process to enable the fullest possible use of catalytic MF at their effects on
substrates of vegetable raw materials and HRV. Based approaches, principles
and methods of using biocatalysis directed to foods and food ingredients
technology.
- Screening presents data on the MFP catalytic activity on 10 different
substrates. The catalytic properties of MOF 20 relating to proteases, pectinases,
including pektintranseliminazam (PTE), cellulases, В - glucosidase, В -
glucosidase, amylases.
- For the most active MF quantitative estimation of affinity to the enzyme
substrates: the Michaelis constant is determined, the maximum rate of
hydrolysis.
- Specificity of enzymes of various kinds of action:
- В - glucosidase Aspergillus awamori, the resulting 45 - fold purification
in a homogeneous form, and В - glucosidase Clostridium theimocellum
(genetically - engineered drugs), in relation to glycosides aromatic raw
materials;
- Bacillus subtilis protease regarding soy protein and pea;
- В - glucanase Bacillus subtilis, Trichoderma reesei cellulase against
structural plant polysaccharides;
- PTE Bacillus macerans against high esterificated;
- Amylase Bacillus licheniformis (genetically - engineered drugs) in
respect of wheat starch.
- For the first time established the mechanism of action aryl-P-
glucosidase Aspergillus awamori on rose essential oil glycosides, comprising
cleavage of glucose from the aromatic aglycone.
- The choice of traditional and non-traditional raw materials of vegetable
and HRV for the action of enzyme systems, due to the composition of raw
materials and substrate specificity of enzymes for specific substrates - sources of
food and food ingredients.
- Establishment of synergy in action of enzymes:
- Aryl - P - glucosidase Aspergillus awamori and Trichoderma viride
cellulolytic complex on glikozidnosvyazannye substrates aromatic plants -
linalool predecessors, citronellol, nerol, geraniol. The synergistic effect is
manifested actions in improving the quality of oils by increasing the content of
valuable components is 1.5 - 2 times (confirmed by chromatography);
- Protease and amylase Bacillus subtilis pea protein during its isolation,
allowing to increase the yield by more than 4-fold.
- Enhanced understanding of the effectiveness of individual enzymes and
their compositions. Each set defining the role of enzymes in biocatalysis
processes (chromatography):
