The purpose of research - development of theoretical and practical
foundations aimed biocatalysis in food technology, ingredients, protein and
carbohydrate nature, derived from non-traditional raw materials and HRV.
To do this, the following tasks:
- Study of the substrate structure not previously used in the processes of
biocatalysis HRV and non-traditional raw materials;
- The study of the catalytic properties of the studied microbial enzyme
preparations (MFP) on the standard and natural substrates, ordering them
towards action;
- Development of a parametric model aimed biocatalysis;
- Scientific substantiation methodology aimed biocatalysis;
- Study the effectiveness of MPA actions on plant material, HRV;
- Development of food technology and ingredients of protein,
carbohydrate-based directional biocatalysis, technical documentation for their
production;
- Experimental methods to prove the enzymatic modification of
functional - technological properties of the ingredients and the possibility of
their use in foodstuffs;
- To conduct experimental - industrial approbation and implementation of
basic research.
The theoretical substantiation of technology of food, ingredients, protein,
carbohydrate derived from secondary raw materials, traditional, non-traditional
vegetable sources, is a scientific hypothesis aimed biocatalysis is the desirability
of selecting MFP for substrate specificity, mechanism of catalytic action, for the
creation of enzyme compositions, exhibit synergism in a "limited" biocatalysis
for intensification of technological processes produce products with desired
release rates and quality. Key points:

microbial enzymes (MF) and biocatalysis modes for vegetable raw material

biosynthesis.

- Use of enzymatic compositions comprising as enzymes, the substrate
directly acting on - the precursor of the final product, and a set of enzymes that
degrade the cell wall structure of plants: cellulase, xylanase, glucanase.
- Solution of environmental problems, and the replacement of acid to
alkali hydrolysis in the enzymatic production of protein and carbohydrate
ingredients nature.
