Dead cells during the main fermentation
The concentration of yeast cells in suspension in wort samples prepared on
water held using ECA water treatment - the system is almost 2 times higher than
in the control samples for the purified tap water. The content of cells in
suspension with glycogen wort almost 3 times the control value, and the contents
of dead cells, by contrast, is reduced 5 times. The duration of fermentation was
reduced to 12 hours. Increase the intensity of fermentation in the main
fermentation stage was the reason for the assumption of the possible positive
impact of ECA-water on the processes that occur during other stages of brewing
technology (Figure 10).
